Job Description


• Directs and guides the stewarding operation to ensure the efficiency and productivity of the service, in conjunction with the Dusit operating standard and procedures.
• Assists the Stewarding Manager managing all back of the house operations, excluding the actual food production.
• Checks condition of dishwashing machine and its detergent dispenser and rinse additive injector makes hourly supervision of all kitchen areas.
• Assists in the implementation of House Rules and Regulation and F&B Policies and Procedures on proper handling of operating equipment.
• Makes sure the kitchen crockery and other equipment is organized on the proper place or shelves
• Familiarizes with the rules and regulations of the Food Handling and hygiene standard of the hotel and the local authorities and ensure the correct implementation.
• Checks the daily function sheet and makes sure that the chafing dish and other kitchen equipment being prepared.
• Supervises the steward in maintaining cleanliness, orderliness and sanitation of kitchen areas and other areas of responsibilities during his shift.
• Monitors and controls issuance of F&B operating equipment under his shift.
• Communicates effectively with superior, steward staff and other section head.
• Minimizes the wastage of all operating supplies, in particular chemical.
• Conducts daily briefing for steward staff on his shift in absence of the Stewarding manager.
• Assists the steward on his shift for special cleaning program or big event
• Provides training for the steward on his shift effectively in the area of weakness.
• Schedules and ensures sufficient manpower in a function.
• Coaches and counsels captain waiters, bartenders and waiters effectively and conduct on-the-job training for Captain Waiters, bartenders and service personnel.
• Conducts performance appraisals and gives the positive comments to ensure the productive performance improvement.
• Performs other duties as assigned by Stewarding manager.


• Reports to the Stewarding Manager of daily accomplishment and daily losses and breakages.
• Works closely with other employee especially head section of each outlet /kitchen concerning distribution of operating equipment or kitchen utensil


• Continuous learning through own IDP.
• Any other duties as may be assigned by the superior.

• Ensure confidentiality and secure storage of all intellectual property and data bases, both hard copy and electronic. Adhere to Dust Internet and E-mail policy. Ensure Hotel, Customer and Staff information or transactions are kept confidential during or after employment with the company.


• Minimum education of High Vocational diploma in any discipline
• Minimum of 2 year of relevant experience. Exposure in kitchen operation is a must
• Good knowledge of the cleaning equipment
• Ability to communicate basic English
• Good planning and interpersonal skills.
